Scallion & tuna roll (negitoro-maki)
When o-toro meat is pounded carefully with a knife into an almost glutinous state, any sinews that might detract from the eating experience are broken down and the sweet flavor of the flesh intensified. A thin layer of rice is placed on the nori, a surprisingly large amount of wasabi added then a healthy sprinkling of chives, the unexpectedly intense tang and fragrance of the chives adding to the sweet richness of the tenderized toro and becoming entwined also with tartness and flavor of wasabi. Together toro, chives, wasabi, nori and soy sauce make a truly dream combination.
