Regarding texture, as it was necessary to indicate at least one level for tenderness, for juiciness and for residue, CF values are higher than in odor (where it was possible to mark a unique characteristic: the ideal characteristic or, if not, a not totally appropriate characteristic or defect). For tenderness, “medium tenderness” (optimum) was clearly the most cited level, with a CF of 56.4%. The next most frequent tenderness level was “slightly tough” (24.2%) and next “very tender” (10.4%). For juiciness, the most highlighted aspect is the similar CF for three levels: “medium-high juiciness maintained over time” (optimum) (33.3%), “slightly dry” (29.1%) and “juiciness not maintained over time” (31.4%). With respect to the residue, “low residue” (optimum) and “medium residue” present a similar CF and account for the majority of citations for this sub-parameter (87.7%).
For flavor, as expected, the most indicated characteristic (44.5%) is the ideal characteristic as well, although with lower CF if compared with odor. It is due to a higher CF for “very low aroma intensity” (17.1%) and “fatty aroma absence” (37.0%), which was revealed as a very important factor to diminish the flavor quality score. So, the perception of general aroma and fatty character became lower when the samples were evaluated in the mouth. Liver related levels considered together (slight, obvious and excessive) reach 37.6% of CF, demonstrating that liver is an important attribute from a descriptive point of view. Despite this, excess of liver aroma (defective) had a very low CF (2.1%).
Metallic sensation appeared as an attribute with importance to describe the samples, with 24.5% of CF as “obvious” (not excessive) and 2.9% as “excessive” (defective).
Regarding defective characteristics of persistence “metallic sensation excessive” turned out as the most cited one, with a CF of 9.3%, far from the other defects (CF ≤ 2.3%). Although low, CF of “metallic sensation excessive” was three times higher than this defect for flavor, whereas “liver excessive”, “rancid” and “urine” had a similar CF.
