Steeping of apricot and cherry kernels namely transfers selected
compounds from the kernels into the liquid. Phenolics may be beneficial
for human health but cyanogenic glycosides are harmful to
our body. But do the distinct composition and high levels of phenolics
in apricot and cherry kernel liqueurs suppress the negative
effects of cyanogenic glycosides? It is unlikely for CGG to cause
any health problems if these beverages are consumed normally,
one portion per day (0.3 or 0.5 dcl of liqueur per day). It is important
to raise the awareness of the potential health risk caused by
cyanogenic plants. Therefore, further studies are required to list
and determine adverse impacts of cyanogenic glycosides present
in natural products.
