The highest WSI obtained for hydrothermal followed
by the fermentation treatment. Reducing barn particle size
had negative effect on Fe+2, Ca+2 and Zn+2 content of the
bran. Except Ca+2 content that decreased slightly upon
fermentation, other minerals tested in this study remained
unchanged. The hydrothermal treatment decreased the amount of all minerals determined in this study. In general,
it can be concluded that hydrothermal treatment was the
most effective method in reducing phytic acid content with
highest amount of total and soluble fiber content. Further
studies are required to improve these methods in order to
obtain lower phytic acid content and to determine the properties
of different food products such as cakes and bread
containing low phytic acid wheat bran.
