Changes in sensory score
The sensory scores decreased progressively with time in both
the plate and air blast frozen samples (Table 4). This decreasing
score indicated the loss of freshness in both the samples. However,
the panelists scored high for plate frozen samples compared
to air blast frozen samples. Although both the samples were sensorially
acceptable throughout the storage period, the samples frozen
in plate freezer scored slightly higher values compared to air blast
frozen samples. The taste and overall acceptability scores were significantly
(P < 0.05) different between the plate and air blast frozen
samples on 3rd month. This indicated that plate-frozen samples
were better than air blast frozen samples in quality because of its
faster freezing rate.
