Considerable research has focused on the growing worldwide
pandemic of obesity, including obesity among the elderly
(Andreyeva et al. 2005; Jenkins 2004; Jenkins, Johnson, and
Ofstedal 2007; Popkin 2006; Popkin 2007). Yet, a signifi-
cant share of the elderly throughout the world is under-
weight and does not get enough calories or the right nutri-
ents from what they eat.
The rising number of elde
