It is also important to study the behaviour of antioxidants in membrane systems. One of the best, and oldest, model systems to study the antioxidant action of carotenoids involves the use of liposomes (Anderson & Krinsky, 1973). Liposomes have been used to evaluate the behaviour of carotenoids in membrane model systems. Hence in the present study, investigations were carried out to evaluate the antioxidant effect of crude carotenoids extract from shrimp waste and its fractions with respect to inhibition of thermal and singlet oxygen mediated oxidation of egg yolk PL liposomes.
