salmonella is an enteric pathogen meaning that it is associated with the digestive tract ( of either humans or animals ). it finds its way into food
either through contamination of raw ingredients or by cross-contamination
from food-handlers carrying the organism (usually the result of poor personal hygiene ). food handlers can carry the organism for many months after
themselves suffering with illness or can carry it without showing symptoms
( know as the carrier state ). food handlers who contact salmonella food
poisoning must not return to work until faecal samples show that they
are no longer carrying the organism.
