As a quality control of samples obtained, some physicochemical
properties were determined. Density of samples varied from
1.137 ± 0.001 for low Brix samples to 1.437 ± 0.028 for high Brix
samples, while pH varied from 2.24 to 2.34 for low Brix samples
and 2.09 to 2.18 for high Brix samples. Tables 2 and 3 summarize
conditions and textural and rheological properties of the 16 samples
studied for each gum. In Table 4, the p-values and % of influence
of each individual factor and interaction that demonstrated
significant influence (p-value < 0.01) were shown, as well as the
residual error, obtained from Taguchi’s analysis. In order to explain
results, the mean values of the effect of each studied variable at
low and high levels were calculated and used for discussions
