Wide ranges of variations exist in the color parameters in tea sample infusions (Supplementary Table 1, Table 2, and Fig. 3).Among all the herbal teas, lightness (L*) ranged from 46.38 to 99.98,with the lowest values coming from the Du Zhong Xiong Hua (H36),whereas the highest value was from Mai dong (H58). The average L*value of herbal teas was 91.98. The a* and b*values of herbal teas ranged from −7.68 to 44.85 and 0.35 to 86.24, respectively. The chroma (C∗) value ranged from 0.35 to 86.26, with the average value of 16.84. Hue angle (H◦) varied from 17.65 to 109.78, and the average value was 90.10. The lowest and highest H◦ values were observed in Luo Shen Hua (H62) and Gui Hua (H70), respectively. Among all the green teas, L*, a*, and b*values ranged from 90.36to 97.21, −0.07 to −1.66, and 8.14 to 14.48, respectively; the aver-age values were 94.7, −0.79, and 11.17, respectively. C ∗varied from8.64 to 14.56, and the average value was 11.21. H◦ varied from 90.42to 95.97, and the average value was 93.91 (Supplementary Table 1,Table 2, and Fig. 3). The results indicated that herbal teas generally had more diverse color parameters of tea samples compared with green teas.
