2.2.4. Technological, physicochemical and biochemical
analysis
The following parameters were evaluated in all the muscles
included in the experiment (see Section 2.2.1). After
weighing the muscles, 12 slices from the central portion
of each muscle were excised to perform all the analysis in
duplicate. Fig. 1 depicts the particular sampling procedure
performed with the slices selected for the study of STPP
and NaCl distribution.
