The noodles served here are made by the old established noodle-making factory located in Asahikawa, which are harmonized with a mellow sweet soy sauce flavoured soup. Despite being made from soy sauce, the pork-based soup has mackerel, tuna, vegetables and soy sauce added to give it the unique flavour, and the appearance of the sauce looks just like miso soup when it is ready. The flavour of the soup is surprisingly light when compared to the colour of its appearance, and the medium-fine wavy noodles match perfetly with the mild tasting soup.
