When0.7%(w/v)chitosan was used, the higher the xanthan concentration the lower was the SD under all conditions studied except when xanthan concentration was increased from 1.0% to 1.5%(w/v) at pH 6.2. On the other hand, with 1.0%( w/v ) chitosan, increasing xanthan concentration resulted in significantly lower SDs only when xanthan concentration was increased from 1.0% to 1.5%(w/v) at pH 4.5 and 5.5 (Po0:05) and no significant difference was observed at other conditions.
