Changes in APC (log
cfu/g) in chicken drumstick packaged with the active and control
bags during 6 days of storage at 5 C are shown in Fig. 1. APC of all
samples increased (P < 0.05) during storage and at the end of the
storage period, APC of samples ranged from 4.70 to 5.73 log cfu/g.
Similar results were reported by Kim and Marshall (1999) who
found that APC in chicken leg increased to about 6 log cfu/g after 6
days of storage at 4 C. In our samples, the increase in APC in
chitosan-incorporated packagingwas about 0.5 log cfu/g whereas it
was 1.53 log cfu/g in samples stored in control bags.
