Baking was followed
by cooling at room temperature and individual packaging in a high
water vapour barrier film (Bicor MB 768, ExonMobil Chemical,
Luxembourg) with a horizontal electronic packaging machine
(Tecnopack mod. FP 020E, Schio, Italy). The properties of the film
are reported in Table 1. For the analyses Amaretti cookies were
selected being 35 mm (þ/2) in diameter, 20 mm high and
weighing 14 g (þ/0.2). The packaged samples were stored for 120
days under controlled temperature/humidity conditions (20 C
þ/0.5 and 55% RH þ/1) in the dark.
