In cattle,CBS can result in passing and contamination of
brain tissue and cerebrospinal fluid such as bovine spongi-
form encephalopathy to the edible carcass
. In addition,the safety of abattoir staff has
been considered just recently. For this
reason, several studies have been conducted on the stun
ning method for cattle,such as the effect of electrical
stunning and the efficacy of CBS
However,there are only a few studies on the stunning
method for cattle compared to those for small animals
such as pigs,sheep and poultry. More in formation is
required about the stunning methods and their efficacy
not only for the beef industry but also for beef quality.
Therefore,the aim of this study was to assess the effect of
CO2 gas stunning which has not been conducted until now
in comparison with CBS on the beef quality.
