3.2. DPPH radical scavenging in FMS with fermentation and proteolysis in fermented mash and FMS
The DPPH radical scavenging activity of FMS with fermentation is shown in Fig. 2. Prior to fermentation, no activity was observed in FMS; however, activity rapidly increased from 3 weeks to 8 weeks and then gradually increased thereafter. The highest activ-ity was observed in the 24-week sample and was 0.55 ± 0.03 lmol Trolox eq./ml. Therefore, the DPPH radical scavenging activity in FMS was generated by fermentation.
