174–37 kDa also increased. This indicates that these 174–37 kDa proteins are soluble when only 25% of ethanol is added, but it begins to precipitate with the increasing concentration of ethanol.The different solubility of each protein might be responsible for the
differences in the yield and viscosity of EpSS (Table 1 and Fig. 1).
EpSS25 shows the lowest yield because only 200 kDa is precipitated
from HS, but it shows the highest viscosity due to its high molecular
weight. Conversely, EpSS75 has the highest yield because most
of proteins except the 23 kDa protein have been precipitated from
HS. However, their viscosity is decreased due to a similar portion
of 200 kDa protein as the HS.
