2.3. Liposome Production by Film Hydration Encapsulation of phenolic extracts in liposomes was car- ried out by the thin-film hydration method [9], with slight modifications. Briefly, 1 g of soy lecithin was dis- solved with 10 mL chloroform in a round-bottom flask and the organic solvent was removed by a rotary evapo- rator until a thin to filmwas formed on the flask walls. Traces of organic solvents were removed by storage for 18 h in a vacuum desiccator. The resulting dried lipid film was dispersed by the addition of phosphate buffer containing 0.2 g of lyophilized extracts.
