(a) Measurement of colour The colour value of samples was measured in Hunter a-value by using a Juki colour meter (JP7100p). Colour values of dried shrimps were measured in three positions: P1 (the head), P2 (middle part) to P3 (the tail) as illustrated in Figure 3. In addition, positive Hunter L-a-b values indicate brightness, redness and yellowness whilst negative Hunter L-a-b values indicate darkness, greenness and blueness, respectively [11]. Additionally, the total colour difference ( Δ E) was determined as described in Eq. (9) [3,5,25].
