To estimate the kinetic parameters Km and vmax, additional testswere carried out at 37◦C and pH05.0 varying S0from 1.25 to 15 g/L.Plotting the results according to Lineweaver-Burk (Fig. 2), theenzyme was shown to follow, with good correlation (R2= 0.994),Michaelis-Menten-type kinetics with Km= 1.92 mg/mL (0.8 mM)and vmax= 357.14 U/mL
