My friend Hugo Harrison shows me how to make a Sourdough starter. Check out the other video of Hugo showing me how to make Sourdough on my channel. Here are the details for the starter:
Day 1: Mix 100g of water and 100g of strong white bread flour until there are no clumps. Cover with a cloth and leave in a warm place for 24 hours.
Day 2: Sprinkle some flour on top of the mixture and cover with a towel again. Leave in a warm place for another 24 hours.
Day 3: To the mixture, add 100g of strong white bread flour and 100g of water and stir until combined. You may notice a few bubbles on the surface of the mixture and a slightly sour smell. These are both good signs that fermentation is taking place.
Day 4: If your starter has plenty of bubbles on top, is smelling sour, and has a light, almost elastic consistency when stirred then you are ready for the next step. If not, simply repeat what you did on day 3.
Remove 300g of the starter and throw it away. To the remaining mixture add 100g of strong white bread flour and 100g of water and stir well until combined. Set aside for 24 hours in a warm place covered with a tea towel.
Day 5: You can now remove your sourdough starter from the bowl and keep it in a clear, airtight container. Simply repeat the removal of starter and addition of fresh water and flour mentioned in the previous step. This time, instead of throwing away the 300g of sourdough starter, you can add it to your bread dough in order to make the loaf rise.
