The cell suspension of individual lactic acid
bacteria containing 109e1010 cfu/ml was mixed with equal proportions
of either distilled water, freeze dried and powdered bacterial
cellulose (PBC), 10% skim milk or 0.85% physiological saline. All the
samples were frozen at 40 C in a freezer for 16 h and dried in
a Scanvac freeze drier at a condenser temperature of 108 C.
