the overall acceptability of the product (r = −0.58). On day 7, a high
correlation was found between the perception of off-flavour, offodour
(r = 0.62) and sourness (r = 0.78). Additionally, the flavour of
the baby carrots perceived by panellists exhibited a positive correlation
with sweetness (r = 0.57). On day 14, the correlation between
off-odour and off-flavour (r = 0.75) became stronger.
