Peptides responsible for the scavenging activity act as electron donors
and convert free radicals to more stable products and terminate
radical chain reaction [51]. It has also been reported that the presence
of certain amino acids in the hydrolysates enhances the scavenging
activities of peptides among the Tyr and Phe [52]. In this respect, the
percentage of Tyr and Phe were the highest in TRMH-Neutrase
(6.58%) and lower in the other hydrolysates (from 5.36% to 5.52%).
