DISCUSSION
To date it is not possible to produce the valuable Monascus
pigments comprised of only one single color component (e.g.,
yellow, orange, red) by fermentation, even though this is desirable
However, the data presented in this paper show that a careful
metabolism regulation is a valid approach to produce Monascus
pigments mixtures comprised of one predominant color component.
In addition, Monascus Pigments comprised of dominant
components presenting different color characteristics can be obtained
through the selection of pH and nitrogen source
