Ripe mangoes (M. indica L.), cv Namdok Mai, obtained
from the local market in Nakhonprathom province
(Thailand) were selected and cleaned to form mango
puree and to prepare fresh-cut mangoes. Ripe mangoes
were 90% mature with 19% total soluble solid
(determined by a portable hand-held refractometer,
Model N32, Bellevae, WA, USA) and 0.33 N firmness
(determined by a Universal testing machine).
