Fig. 2B presents the effect of pressure (20–40 MPa) on the total
lycopene yield and antioxidant activity. As expected, yield increased
with the increase of pressure, while antioxidant activity
slightly decreased. Qiu, Jiang, Wang, and Gao (2006) reported that
lycopene stability was not affected by treatment with high hydrostatic
pressure (10–60 MPa). However, their conclusions were obtained
under a relatively lower temperature (20 ± 1 C).
Fig. 2C shows the change in lycopene yield and antioxidant
activity of the lycopene-rich extract as a function of flow rate
(1.0–2.0 mL/min). Unlike with temperature and pressure, there is
no energy input or variation for lycopene reactions when changing
the flow rate. Therefore, there is no effect of flow rate on the antioxidant
activity of lycopene extract.
