Inland honeys were obtained from chestnut, honeydew, and Rubus, or their blends.
The stepwise regression analysis for the prediction of the antioxidant capacity allowed explanation of the interrelationship between the flavonoids and several minerals (Table 5). The best obtained model (R2 = 0.716; F = 154.680; P < 0.001) incorporated the variables: flavonoids (P < 0.001), P (P < 0.01), and K (P < 0.05).
