2.6. Analysis methods
The mouldy substrates (koji) produced by solid state
fermentation were mixed with 40 volumes of water to
extract cellulase, stirred slowly at room temperature for
3 h and filtered. The liquid portion was then used for
the measurement of cellulase activity.
