Based on the above considerations, it can be seen that published
information on application of HVEF for thawing frozen foods are
scarce. The present study is part of an ongoing research on HVEF
thawing of frozen foods to collect such information. The specific
objective of this study was to evaluate the effects of still air thawing
method combined with an HVEF system used for thawing frozen
fish on thawing time, and energy consumption for different electric
field strengths, corona wind velocities, electrode distances, and
voltages.
