The results of the present study clearly indicate that E-beam
irradiation has a preservative effect on salmon fillets and greatly
prolongs their shelf life, and may have practical value to improve
the fishery products. Moreover, E-beam irradiation significantly affects
the properties and edible quality of salmon fish fillets. A shelf
life of 12 days was recorded for the E-beam-irradiated vacuumpacked
salmon fillets, which was longer than the shelf-life of
6 days observed for the non-irradiated vacuum-packed fillets
based on biochemical and sensory attributes. The irradiation dose
of 0.5 kGy was successfully used to treat salmon fillets and is recommended
to be the optimum irradiation dose to keep salmon
quality using the 10 MeV electron linear accelerator.
