Method
Soak the noodle in hot water for 15 minutes or cook until tender. Drain. Mix in the fish sauce, with sugar, lemon juice and chili sauce. Heat oil in a large frying pan. Fry the garlic in the oil for 30 seconds, add the sauce and noodles, and toss for a minute. Add beans hoots and cook, tossing until everything is hot. Serve immediately as these noodles break easily and become sticky if left.
