The final success of utilizing plant protein and car-bohydrate as additives depends greatly upon the favorablecharacteristics that they impart on foods. The develop-ment and use of defatted beniseed flour and unripe plan-tain flour would provide industry with new high proteinand iron food ingredients for product formulation andprotein fortification (Uwala 2002).
