It can be observed in Fig. 2 that, according to the Avrami analysis,
two different crystallization mechanisms were observed for
the two temperatures. When the samples were analyzed at 25 C,
crystallization was not observed for the palm mid fraction with
or without sucrose behenate. Palm oil with and without sucrose
behenate showed an n value very close and both indicated a sporadic
nucleation process with a multidimensional growth mechanism
