The pediocin operon of P. acidilactici consists of
four clustered genes, namely pedA (encoding a 62
amino-acid precursor of the PA-1 pediocin), pedB
(encoding an immunity factor), pedC (encoding a
PA-1 transport protein) and pedD (encoding a
protein involved in the transport and processing of
PA-1) [188]. The leucocin operon of L. carnosum
comprises two genes: lcaB (encoding a 61 aminoacid
precursor of the B-Ta11a leucocin) and lcaB1
(encoding a 113 amino-acid immunity factor) [34].
Both the P. acidilactici pedA and L. carnosum lcaB
genes were inserted into a yeast expression-secretion
cassette and introduced as multicopy episomal
plasmids into laboratory strains of S. cerevisiae.
