2. Materials and methods
2.1. Materials
Native cassava starch (Dragon Fish brand) with moisture content
of 11% of total weight was purchased from Tong Chan
Registered Ordinary Partnership (Thailand). Chitosan (deacetylation
degree of 85% and molecular weight of 500 kDa) was supplied
by Seafresh Chitosan (Lab) Co., Ltd.(Thailand).Acetic acid (99%) was
a product of Merck (Germany). The glycerol used was a commercial
grade product.
