2. Materials and methods
2.1. Powders and binary mixes
Four food powders, paprika, oregano, sugar and salt, were
obtained from Santa Maria–Paulig Group, Gothenburg, Sweden.
The binary powder mixes prepared were:
Paprika/Salt (P/S)
Oregano/Salt (O/S)
Sugar/Salt (S/S)
The powders selected are representative of the components
typically used in a spice mixture. Salt is a standard ingredient in
almost any spice/flavour seasoning. Paprika represents the standard
powder particle similar in shape and size to other spices like
e.g. black pepper powder, cumin powder and coriander powder.
Oregano represents the dried herbs category of particles which
are typically larger in size with distinct shapes.
