involves neither heat nor chemicals, and may increase the retention
of beneficial phytochemicals (Yu, Zhou, & Parry, 2005). It is well
accepted that antioxidants may protect important cellular components
such as DNA and membrane lipids from oxidative damage and
suppress the pathology of cancer, cardiovascular diseases, and other
aging-associated health problems.
