Thermal stability of MFR extract was studied by heating the extracts at 40, 50, 60 and 70°C for holding times of 30 min. Before heat treatment, MFR extracts were adjusted at pH value of 5.0. Meanwhile, the effect of UV-C treatment on MFR extract was studied by exposed the extract under UV-C light from 0 to 5 hours. The data obtained are given in Fig. 2. Based on the data on Figure 2A, MFR extracts was stable after heat treatment at 50oC for 30 minutes, but when heating temperature was elevated up to 70oC the absorbance was increased gradually. It may be the solvent of MFR extract was evaporated after heating at 50oC and lead to concentrate the extract. However, the other factor also contributed to the stability of pigments such as the changes of pigment structure or oxidation process. Heating treatment to a carotenoid pigment produced a complex mixture products, including various radical species are formed and can react with oxygen to form peroxyl radicals, which can undergo propagation reactions with additional carotenoids9.
