showed that spraying ‘Cabernet Sauvignon’ grapes with 5%
ethanol at veraison enhances the anthocyanin accumulation and
color development. The present study showed that postharvest
ethanol vapor treatment may enhance berry color during storage.
After 4 months of storage, there were no differences in berry color
among treatments (Table 4), and the headspace ethanol content
of ZOEpac-210 bags containing Antimold sachets reached similar
levels to other treatments (Fig. 2).
