Several enzymes of industrial importance have been extracted from the fungi belonging to the genus Aspergillus. The importance of this genus is so much, that it has been studied as a model organism for fungal enzyme production (Holker et al., 2004). In fact, A.niger is by far the single largest fungal source of enzymes. The metabolic differences between SSF and SmF have a direct impact on the productivity of the fungus.
