In addition, the reduction trend was similar between PGBR and
BR (steaming > boiling > frying), which indicated the same degree
of degradation of c-oryzanol. After boiling, the germ was removed;
however, the concentration of c-oryzanol was only slightly
decreased, indicating that the germ did not significantly contribute
to the c-oryzanol content in rice. In general, the rice starch gelatinisation
starts at 68 C and is completed at 78 C (Stephen, 1995),
which means that in this experiment, the starch was completely
gelatinised as the cooking temperature reached 100 C. In addition, the source of WR, BR and PGBR is similar; therefore, the ultrastructure,
including starch type and starch granule size, should be similar,
hence contributing to different degrees of gelatinisation that
can be regarded as the minimum. In addition, the amylose and
amylopectin content of WR, BR and PGBR were the same (70:30
amylopectin to amylose). This ruled out the variation of amylose
effect on gelatinisation, which states that high amylose content
results in high gelatinisation process.
Steaming resulted in less loss of c-oryzanol (almost 0% loss).
Gelatinisation increased the starch viscosity, which could result
in protective effect of the c-oryzanol and tocols. In boiling processing,
reduction of c-oryzanol could be due to the leaching out of
compounds into water. From Fig. 3, higher c-oryzanol was noted
in boiled PGBR compared to boiled BR. This could due to (i) the
bran layer acting as a protective coat to c-oryzanol and (ii) the
leaching of the c-oryzanol rate was slower in PGBR than BR during
boiling. Water play a vital role in rice cooking especially during
gelatinisation to swelling and dissolution, and boiling with excessive
water could enhance the dissolution of c-oryzanol and tocols,
resulting in a reduction of c-oryzanol. Furthermore, the leaching of
amylopectin and amylose results in different degrees of gelatinisation
during rice boiling
