Differently from the soybean oil emulsions, the microscopic images of emulsions produced with hexadecane showed the formation of spherical droplets in all samples (Fig. 8). In general, the water–hexadecane–PGPR emulsions showed larger droplets than emulsions with soybean oil and the same emulsifier. However, water–hexadecane–Span 80 emulsions showed smaller droplets than PGPR emulsions. At 30:70 W:O ratio, the droplets seem to be flocculated. The droplets of the emulsion with lecithin were very large. At 60:40 W:O ratio, the droplets are coalescing, forming a bicontinous phase.
