A concentrate of pure D-lactose monohydrate (Sigma-Aldrich) was
prepared in BBM medium at 100 g L−1, filtered on 0.2 μm syringe filters,
and then diluted to the desired concentration before inoculation. Cheese
WP was received from a dairy trans for mation plant in Quebec, Canada
(shipped on ice). Upon reception, the pH of the WP was 6.2 ± 0.1
(Supplementary material).
