Tequila also has 5 categories as follow:
Blanco (Plata) – Blanco means white. Plata means silver. Actually, they are all means clear color. Blanco tequila is white spirit as finished product which directly bottled after distillation process. Some blanco can be aged in stainless steel tank.
Joven (Oro) – Joven means young. Oro means gold. This is gold color tequila but young and low quality. It is actually unaged Blanco tequila with the adding of caramel color and flavor.
Reposado – Reposado means rested. After distillation process, white spirit will be aged in any sizes of oak barrel for minimum 2 months but less than 1 year (2 – 12 months). Reposado tequila will be gold color from oak barrel.
Añejo – Añejo means aged. After distillation process, white spirit will be aged in oak barrel for minimum 1 years, but less than 3 years in small oak barrel (1 – 3 years)
Extra Añejo - Extra Añejo means extra aged. After distillation process, white spirit will be aged in oak barrel for minimum 3 years. This category was started in March 2006.
Aging Reposado tequila is normally used oak barrel. Aging tequila will allow tequila to soften taste such as tannin. But tequila will develop more richer and complex flavor. White oak is usually used for aging tequila. Popular oak barrel is from US, France, and Canada. In some companies, they might burn the wood barrel before aging to give some smoky flavor to tequila. Moreover, aging tequila sometimes use used barrel that was used from aging wine or whisky as well.
Aging Añejo tequila uses barrel that used for Reposado tequila. In some companies, they will normally use barrels that were already used for aging whisky. Used barrels from Jack Daniels, US, and Canada are very popular to be used for aging Añejo tequila. This is because these used barrels will add some darker color and complex flavor to Añejo tequila
