Grapevines of the Sangiovese variety were cordon
trained and spur pruned (4–5 spurs with two buds per
vine), rows were north–south oriented and the spacing
was 1 m in the rows and 3 m between the rows. The
canopy was trained in a single curtain between 90
and 210 cm from ground level. The vineyard, called
Paretaio, faced south, the elevation was 180 ma.s.l. and
the slope 16%.
