The textural properties of sample were measured by a
0.25 Ø spherical probe attached to a texture analyzer (TAXT2i,
Stable Micro Systems Ltd., England). The test conditions
were as follows: stroke, 20 g; test speed, 2 mm/s;
distance, 10.0 mm. Data were collected and analyzed
regarding the hardness (kg), springiness, cohesiveness,
gumminess (kg), and chewiness (kg) values.
