Preliminary tests with pasteurized orange juice showed occurrence
of spoilage beyond 42 days of storage at 4 C in the
refrigerator. Hence, 42 day storage time period was selected for the
study to determine the stability of rice bran peptide fraction. The
concentration of the peptide fraction in orange juice was determined
based on the minimum effective concentration of 3 mg/mL
for effective biological property (data not included) which was used
in this study.
