The content and chemical composition of NSP varies between lupin species and cultivars, but in general the major NSP in lupin kernels is galactan consisting of various amounts of d-galactose, l-arabinose, l-rhamnose and galacturonic acid (Brillouet and Riochet, 1983; Carré et al., 1985; Gdala and Buraczewska, 1996).
